The Revolution of Cuisine

In 2003, the Giannini family joined forces with Michela Barsotti, who had been the chef of the restaurant for over 20 years. Together, they embarked on a journey to renew the restaurant, touching every aspect from the kitchen, to sourcing the finest ingredients, to building the team. Michela, born into a culinary family, preserved and strengthened the foundations of Viareggio's seafood tradition while introducing new techniques and bringing fresh ideas and a new culinary culture to the establishment. Many of her dishes still remain on the menu today, serving as symbols of the hard work and passion she dedicated throughout the years.

Andrea and Ayoub represent the natural continuation of the work started by Michela and all those professionals who, from a young age, have supported and taught them the secrets of the trade.
